We are absolutely dedicated to our land, which is why our products are made in limited quantities, and are traceable from plant to bottle.
VALPOLICELLA
CLASSICO SUPERIORE DOC
Made from controlled-denomination Valpolicella Classico red grapes grown in our vineyard. The grapes are dried, before being handpicked and stored in wooden crates and fermented and macerated in steel vats at controlled temperatures. The grapes are then aged for a year in old French oak barrels, each holding five hundred litres. The wine is not filtered before bottling.
This wine is also suitable for long ageing in glass to express the full personality of our terroir.
VERONESE
ROSATO IGT
Using the same regionally-certified red grapes with similar proportions of varieties, we have produced a rosé. The grapes are passed through a crusher machine and the wine is made from the must, which “bleeds” off from the skins without pressing, and separates from them in one night. The wine is then steel-fermented at low temperatures, where it remains until spring. It is bottled before the summer, without filtering. A part is subjected to a second brief refermentation in an autoclave.
This wine, also suitable for the hottest months of the year, expresses the fragrance of the fresh grapes from which it comes.
VINEYARD
At an altitude of 200 metres, on terraces supported by the characteristic dry walls or “marogne“, made from local stone, and by ancient limestone soil, our vineyard enjoys a good exposure with a moderate continental climate and a Mediterranean microclimate, shielded by the Lessini mountains to the north and close to the southern end of Lake Garda.
A traditional Veronese pergola system made from chestnut wood poles: this ancient method protects against extremes of temperature.
VARIETALS
Our blend is made from typical native red grapes, mainly Corvina Veronese, Corvinone and Rondinella, with Oseleta and Molinara in smaller amounts. This gives the wine its characteristic mix of colour, aromas, tannins, structure and acidity.
CULTIVATION
We have obtained organic certification which we consider the minimum quality requirement towards credible sustainability. In close collaboration with the agronomist we carry out the work and treatments in the field almost mainly by hand, with our own means, with the minimal use of phytosanitary products such as copper, sulfur and rock dust, as well as biological fertilizations and abstention from the use of herbicides. We apply the sexual confusion technique against moth.
REFINEMENT
Our current small size does not allow us to make wine in our own premises, therefore we rely on a historic winery, rich in experience and expertise, which confidently adopts organic winemaking practices to produce our unique wine exclusively from our grapes, from spontaneous fermentation on its own indigenous yeasts, with low sulphites, bottled unfiltered. As soon as they are bottled, our wines age in a room with controlled temperatures and humidity.
EXTRA-VIRGIN OLIVE OIL
Our olives, mainly the Grignano and Favarol varieties, are grown the biological way, harvested from the tree at just the right time, and are then cold-pressed by our favourite olive miller within fifty hours of harvesting. The oil is then left to decant for forty days in cool steel before being bottled, unfiltered.
